KETO Raspberry and Cream Panna Cotta

Raspberry and Cream Panna Cotta (Keto)

- 3 ½ cups heavy cream
- ½ cup water
- ⅓ cup Good Good Sweet Like Sugar
- 2 envelopes unflavored gelatin
- 2 teaspoons vanilla
- ½ cup Good Good Sweet Raspberry Jam
- ¼ cup fresh raspberries
- 1 small bunch fresh mint
In a medium saucepan, combine the heavy cream, water, Sweet Like Sugar, and vanilla. Whisk the gelatin into the cream mixture and allow to bloom for 10 minutes. Place the mixture over medium heat and stir until the mixture begins to steam and the gelatin has melted completely. Remove from the heat and stir for 5 minutes to cool slightly. Pour into 8 small bowls or glasses and cover them with plastic wrap. Place in the refrigerator and chill until set, about 2 hours. Top each serving of panna cotta with 1 tablespoon of raspberry jam, a few raspberries, and mint.
