As we celebrate the art of easy and delightful recipes, our cake promises to be a star on your dessert table. With plump, juicy blackberries stealing the spotlight, and our jam's non-glycemic properties, it becomes a celebration of guilt-free indulgence. Ingredients:
  • 2 cups fresh blackberries
  • ½ jar of Good Good Blackberry Jam
  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup extra virgin olive oil
  • 1 cup alternative granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • Powdered alternative sugar for dusting

Instructions:

  1. Preheat your oven to 350°F and grease and flour a 9-inch round cake pan.

  2. Dry Ingredients: In a bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

  3. Mixing the Batter: In a large mixing bowl, combine the olive oil and granulated sugar. Beat until well combined and slightly fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

  4. Incorporating Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk. Begin and end with the dry ingredients, mixing until just combined.

  5. Gently fold in the fresh blackberries and half the jar of Blackberry Jam, ensuring even distribution throughout the batter.

  6. Baking: Pour the batter into the prepared cake pan, spreading it evenly. Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.

  7. Allow the cake to cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.

  8. Finishing Touch: Once cooled, dust the top of the cake with more jam and berries or powdered sugar for an added touch.
