Mini Blackberry Pies using Blackberry Jam

Try this pint-sized portion with colossal flavor! Our kid-size Mini Blackberry Pies were crafted with little hands and big hearts in mind. These adorably small delights are bursting with sweet blackberry goodness, encased in a golden, flaky crust. The addition of zesty lemon and a hint of basil elevates these mini pies to a whole new level of deliciousness. Join us in the kitchen for a fun-filled baking session that will leave your little ones grinning from ear to ear!

Ingredients:
  • 1 Package pie crust (package of 2)
  • 1.5-2 Jars of GOOD GOOD Blackberry Jam (Filling)
  • 1 cup of blackberries (Filling)
  • Juice of a medium lemon
  • Lemon zest (garnish)
  • Basil leaves (garnish)
  • 1 Egg
  • 1 Tsp alternative granulated sugar

Directions:

1. Pre-heat and Prepare: Kick off the baking excitement by preheating your oven to 450°F. Grab a kid-sized cupcake pan and let your little chef give it a quick spritz of non-stick spray.

2. Create the Minis: Roll out one of the pie crusts and use a fun-sized 4" round cookie cutter to create six bottom crusts. Watch those tiny fingers press each crust into the cupcake tins, leaving a bit of overlap for the perfect marriage of bottom and top crusts.

3. Fill with Berries: Fill each tin ¾ full with a delightful mix of GOOD GOD Blackberry Jam and fresh blackberries. Let the lemon join the party by squeezing its juice into the mix.

Topping the Pies:

1. Creative Choices: For a simple top, cut out 3" rounds and use a fork to crimp them together with the bottom crust. Feeling adventurous? Try a lattice crust, weaving strips into a pattern your little one will love.

2. Chill and Brush: Pop those mini creations into the fridge for at least 10 minutes – the colder, the better! Let your mini baker whisk an egg with a tablespoon of water. Lightly brush the egg wash onto each pie and sprinkle with a dash of sugar.

3. Bake to Perfection: Watch the mini pies come to life in the oven for 20-30 minutes. Keep an eye out, and if the crust starts to tan before the filling bubbles, a little foil hat will do the trick.
